The richness of the Yarden Katzrin Chardonnay begins with its nose, which exhibits an aromatic blend of characters: ripe pears and apples, tropical fruits, hints of flowers, all layered with opulent oak. The intensity follows through in the flavor, which shows great concentration and leads to a long, satisfying finish. The 2000 Katzrin Chardonnay is ready to enjoy, though it should continue to improve with a couple of years of aging and should drink well for up to seven years following the harvest. We most enjoy Katztrin Chardonnay with richly flavored foods, such as a seafood risotto, grilled duck breasts or even pasta al Fredo.

Yarden Katzrin Chardonnay is 100% varietal. All the fruit comes from the northern Golan Heights, the coolest area in Israel, from vineyards of up to 1,200 meters (3,900 feet) in elevation. These vineyards produce outstanding Chardonnay fruit year after year. The wine fermented in new French oak barrels and aged sur-lies in the same barrels. The wine completed malolactic fermentation in barrels and was bottled without filtration.

The Galilee (or Galil) is the most northern, and generally considered the best,appellation in Israel. The highest quality area within the appellation is the Golan Heights (or simply the Golan), the coldest region in Israel. The vineyards on this volcanic plateau rise from 400 meters (1,300 feet) above sea level to 1,200 meters (3,900 feet) and receive snowfall in the winter. The Golan Heights Winery is located in the town of Katzrin, in the central Golan.
